Keto Collard Greens with Bacon

Collard Greens with Bacon 



The reason I love to make collard greens is because they are very filling, high in fiber, and low in carbs.

I’ve pretty much mastered the creation of collard greens (to my tastes) since starting keto in February.  Plus, ever since I was introduced to greens by my mother-in-law years ago, they’ve been one of my favorite foods. Everyone seems to make them differently, but here’s my take.
*Remember, I post photos of my ingredients nutrition facts, and a rough idea of the macros, but these will differ depending on how YOU make it, using your own ingredients/brands. All recipes are my own unless otherwise stated.


Kaytee’s Southern Collard Greens with Bacon
2 lbs of shredded collard greens
1 carton of chicken broth (4 cups)
1 tbsp olive oil (optional)
1 lb bacon uncooked
1-2 tsp minced garlic
1 tsp crushed red pepper flakes
1 tsp onion powder
1 tsp salt and pepper
  1. Cut your bacon into smaller pieces and fry them in your biggest pot, over medium high heat. This is also where you can add some olive oil. You want to cook the bacon down to make a lot of grease.
  2. When the bacon is almost done, add your garlic in and stir it up. You don’t want it to burn.
  3. You’ll have to add your greens to the pot in batches. Start putting them in your pot by the handful. Use a large spoon to mix them around so that the grease coats them, and they start to wilt.
  4. Keep repeating step 3 until you have all the greens in the pot.
  5. Add your spices, and the chicken broth to the greens.
  6. Bring to a boil, then turn the heat down to a simmer. The longer you simmer, the softer and darker the greens will be.
If you like the greens to be soft and cooked a lot, I recommend simmering them for about an hour and a half. You can adjust this to your liking. I hope you enjoy.
