Keto Mayo Parmesan Chicken

You and your family will love this easy chicken recipe. It has become a staple in our household. I have to make it at least once a week!



Keto Mayo Parmesan Chicken


Ingredients

  • 4 boneless, skinless chicken breasts or about 6 boneless skinless chicken thighs
  • 3/4 cup mayo
  • 1/2 cup parmesan cheese (I like the course grated)
  • 3/4 tsp poultry seasoning
  • 3/4 tsp garlic powder or 1 tsp minced garlic
  • Salt & pepper to taste

Directions

  1. Preheat oven to 375F. Spray a baking dish with non-stick spray. Coconut oil is fine too. Just enough so nothing will stick.
  2. If you're using breasts you can cut larger ones in half and pound them out, or keep them whole. The more uniform the size, the more even they will cook. Place the chicken into the dish and season with salt and pepper.
  3. Mix the mayo, poultry seasoning, garlic powder or minced garlic, then stir in the grated parmesan. Use a spatula to spread the mayo-parmesan coating over the top of each piece of chicken, covering the entire surface.
  4. Bake chicken 35-40 minutes, or until the chicken is firm and the top is browned. This time may vary depending on the thickness of the chicken or whether or not you're using breasts or thighs.

  1. This turned out really good!! The mayo and parmesan spread was very flavorful and had a bit of a crunch to it. The chicken turned out juicy as well. The chicken breasts I used were medium size and I cut them in half so they would cook quicker and more evenly. I will definitely be making this again! Yum!
