Keto Brussel Sprouts Gratin

Have you been waiting for a delicious, creamy brussel sprout dish? The wait is over. 

These brussel sprouts are better than carbs! No seriously. The brussel sprout belongs to the cabbage family, and are considered a leafy greens vegetable.

Though they are slightly higher in carbs than some other vegetables on the keto diet, they have many health benefits. Brussel sprouts are loaded with vitamins and minerals, and have a good amount of fiber. Try this method of preparation, and you'll be hooked. 

Brussel Sprouts Gratin

Keto Recipe, Brussel sprouts Gratin
Serves 6 | Prep time: 10 mins | Cook time: 15 mins


  • 1 pound brussel sprouts, halved
  • 1/2 cup heavy whipping cream
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup crushed pork rinds
  • 2 tbsp butter


  1. Preheat oven to 400 degrees F. Coat an oven safe dish with butter or spray non-stick.
  2. Place brussel sprouts in a microwave safe bowl, covered with plastic wrap and microwave for 6 minutes. Optionally, bring water to a boil and add sprouts. Cook for 8 minutes, and drain. The goal is to cook the brussel sprouts before baking them.
  3. Add brussel sprouts to buttered dish. Season with salt, pepper, and red pepper flakes. 
  4. Drizzle heavy cream over brussel sprouts, top with cheese, and crushed pork rinds. (I make mine in the food processor. Just pulse them for a few seconds and voila.)
  5. Add butter to top of dish, in small "dots" around the dish. Bake for 15 minutes. Turn on broiler at the end for a few minutes to get the dish extra bubbly and crusted.
