Keto Taco Stuffed Peppers

Okay guys, seriously. These peppers are good. Honestly, they barely need a recipe. I saw a similar recipe online with rice, and I bet you could sub cauliflower rice, but I didn't. When this was cooking, I could smell it, and it was SO hard to wait for dinner. There isn't really much to say about these other than "delicious, quick, and easy" so lets get into the recipe!

  • 4 green bell peppers
  • 1 pound ground beef (80/20)
  • 3 tablespoons of keto-friendly taco seasoning (recipe)
  • 1/2 cup shredded cheese of your choice
  • Your favorite taco fixings

  1. Cut the tops off your Bell peppers and de-seed them. Bring a large pot of water to boil.
  2. Salt the water and add peppers to boiling water for 3-5 minutes. You want them softened but not too softened. Drain in collander.
  3. Preheat oven to 400 degrees F. Set peppers in a baking dish.
  4. In a skillet over medium-high heat, brown ground beef. 
  5. Season meat with taco seasoning. You can even add in extra peppers, or onions. The world is your cooking canvas. 
  6. Spoon taco meat into peppers and top with shredded cheese.
  7. Bake for 20 minutes.
  8. Serve taco peppers with all your favorite toppings. 
*Macros are for the stuffed peppers only. You can certainly double the recipe easily.
