I follow a keto diet, and really miss soup. Most of my favorites have more carbs in them than I like. A lot of them that i've tried with lower carb ingredients, just don't taste as good.

I found a similar recipe online for this cabbage soup, and decided to try to make it as low in carbs as possible. Now, I know that this soup isn't for everyone, because it is still almost 10 net carbs per serving, but compared to most other soups, that's quite low.

You could definitely take this recipe to the next level but adding some hot sauce, or lowering the carbs more by adding less onion. There are so many possibilities. A little Sriracha never hurt anyone right? 

Don't have an Instant Pot? You can make this in a standard pressure cooker, or a regular pot on the stove, just increase the time. You'd follow all the same instructions except you'd bring it to a boil, then lower it to a simmer for an hour or two. 

Personally, I have the Lux Instant Pot which is a multi-use pot. Lots of different settings, including a Slow Cooker setting which is nice for when I want to leave something cooking all day. You can do so much with these, even boiling eggs! Definitely check them out if you haven't got one.

Low-Carb Cabbage Roll Soup

Ingredients:

  •  1 small onion, diced 
  • 2 garlic cloves, minced 
  • 1½ lbs 80/20 ground beef 
  • 3 cups beef broth 
  • 1- 14 oz can Red Gold diced tomatoes 
  • 1- 8 oz can Red Gold tomato sauce 
  • ¼ cup soy sauce 
  • 1 small/medium cabbage, chopped 
  • 3 tsp Worcestershire Sauce 
  • ½ tsp parsley
  • ½ tsp salt 
  • ½ tsp pepper 








Directions:

  1. Turn Instant Pot on Saute and brown ground beef with diced onions and garlic.
  2.  Drain. Add beef mixture back to the Instant Pot after draining grease, then add all other ingredients. 
  3. Place lid on Instant Pot and turn to lock position. Make sure to turn to the sealing position.
  4. Turn Instant Pot off the Saute setting by pressing the Off button, then press the Soup button.
  5. Allow Instant Pot to come to pressure and complete the soup cycle. (30 mins). 
  6. After the cycle is over, do a quick release of the steam valve. Once pressure is released, it's ready to enjoy!
